Avocado Egg Rolls

Ingredients
Avocado Rolls

egg roll wrappers
3
avocados
peeled,seeded, and diced
1/4
cup
onion
diced
4-5
sun-dried tomatoes
chopped

tbsp
chopped fresh cilantro leaves
1
Lime
juiced
Kosher salt and freshly ground black pepper
to taste

vegetable or canola oil
for frying
CILANTRO DIPPING SAUCE
3/4
cup
fresh cilantro leaves
1
jalapeno
seeded
3
tbsp
olive oil
1
clove
garlic
1
Lime
juiced
Salt and freshly ground black pepper
to taste
Instructions
For the Rolls
Mix together the avocado, onion & sundried tomatoes, cilantro, and lime. Season with salt and pepper to taste.
Spoon about 1 tbsp or so of mixture onto each egg roll and roll up, seal the edges of the rolls using some lukewarm water.
Warm up some vegetable oil to medium high before adding in the rolls, Turn them once or twice and cook until golden.
For the Dipping Sauce
Mix together all the ingredients in a blender and blend until fairly smooth.
Taste and adjust the amount of salt and pepper as needed.
