Caramel Popcorn 

Caramel popcorn is a wonderful combination of sweet and salty.  This recipe can be customized by adding any combination of fruit nuts chocolates or candies that you like.  It makes a great gift as well and can be wrapped up in cellophane as I’ve shown below.  
Make the caramel and boil until it reaches soft ball stage.
Mix the popcorn with nuts and dried fruits before pouring the caramel over it.

Caramel Popcorn

Ingredients:
1 cup butter 
1 1/3 cup brown sugar
1/2 cup corn syrup
12 cups popped popcorn

1 1/2 – 2 cup nuts (or dried fruits, chocolate chips etc)

Method:

  1. Mix together popped popcorn and nuts and lay flat on parchment lined cookie sheets or baking trays.  
  2. In a saucepan add the butter. brown sugar, and corn syrup and bring to a boil.  Boil for 8-10 min until it reaches soft ball stage (i.e. 235°F or 118°C).
  3. Remove from heat  and add 1 tsp vanilla (careful as it will really boil when you add the vanilla) 
  4. Pour the sauce over the popcorn and nuts.  
  5. Let cool and put them in zip top plastic bags (you can freeze this too).
