Fried Avocado Egg Rolls

I did not know that Avocado could be used in the form of a spring roll/egg roll and I an SO grateful that I saw this on one of my friend’s Insta Stories and I created my own version of it. I don’t deep fry things often, but this recipe is really worth it!

Avocado Rolls

  • 8 egg roll wrappers
  • 3 avocados peeled,seeded, and diced
  • 1/4 cup onion diced
  • 4-5 sun-dried tomatoes chopped
  • 2 tbsp chopped fresh cilantro leaves
  • 1 Lime juiced
  • Kosher salt and freshly ground black pepper to taste
  • 2 cups vegetable or canola oil for frying


  • 3/4 cup fresh cilantro leaves
  • 1 jalapeno seeded
  • 3 tbsp olive oil
  • 1 clove garlic
  • 1 Lime juiced
  • Salt and freshly ground black pepper to taste


For the Rolls

  • Mix together the avocado, onion & sundried tomatoes, cilantro, and lime. Season with salt and pepper to taste.
  • Spoon about 1 tbsp or so of mixture onto each egg roll and roll up, seal the edges of the rolls using some lukewarm water.
  • Warm up some vegetable oil to medium high before adding in the rolls, Turn them once or twice and cook until golden.

For the Dipping Sauce

  • Mix together all the ingredients in a blender and blend until fairly smooth.
  • Taste and adjust the amount of salt and pepper as needed.
