Thai Inspired Cilantro Chicken
This recipe is truly unique and a welcome departure from the flavors that I’m used to cooking with. I combined a few different recipes that I found online (with my own twist) and it’s definitely a keeper! The chicken works great served over rice or even inside a wrap. Just be sure not to overcook the chicken breast as that makes it really dry and chewy.
Thai Inspired Cilantro Chicken
Ingredients:
2 skinless/boneless chicken breast halves
2 garlic cloves, crushed
1/2 cup cilantro, chopped
1-2 Thai green chilies, minced
1 tbsp fresh lime juice
1 tbsp Asian fish sauce
1 tbsp sesame oil
Method:
2 skinless/boneless chicken breast halves

Method:
- Cut the chicken into equal sized cubes.
- Place everything except for the chicken in a food processor (or chopper) and blend until smooth.
- Marinate the chicken in the blended ingredients for at least half an hour (in the refrigerator).
- Heat your grill/griddle or oven to a high setting and cook one side completely before flipping the pieces over. Cook until it’s no longer pink in the center and then let rest for about 5 minutes before serving.
